Serious Eats Science • Daniel Gritzer
The Serious Eats Goal: Potato-chip crisp skin, cloud-like fluffy interior, and rich butter & seasoning infused into every single bite.
Use a fork or paring knife to pierce the skin in 6 to 8 spots. This releases internal steam pressure and eliminates any risk of a potato blowout.
Wrapping in foil traps escaping moisture and steams the skin into soggy, rubbery leather. Leaving it unwrapped in dry convective heat crisps the skin into an edible, salted delicacy!
Roasting for 50–65 mins allows heat to gently penetrate to the core, yielding maximum fluffiness without developing a tough, dried-out ring under the skin. ⚡ Need it fast? Microwave 5 mins on high, then roast 20 mins @ 450°F indirect!
Rub lightly with high-smoke-point oil (olive, canola, avocado) and kosher salt. Butter contains 18% water and milk solids which prevent the skin from crisping.
Keep elevated on indirect grill grates so dry hot air circulates 360°. Flat aluminum sheet pans conduct too much heat and scorch bitter dark spots.
Jamming pats of butter into a cut slit leaves the edges dry and pools liquid fat at the bottom.
